Bacon Wrapped Jalapeño Poppers

Bacon Wrapped Jalapeño Poppers are spicy jalapeño halves filled with a creamy mixture of cream cheese and shredded pepper jack or Colby Jack cheese, then wrapped in bacon and baked. Baking creates crispy bacon exterior and softened, melted cheese filling with moderate heat from the jalapeños.

Description

This appetizer involves halving jalapeños and removing seeds and membranes to reduce heat slightly, leaving a hollowed "boat". The filling combines cream cheese with shredded pepper jack or milder Colby Jack cheese, plus garlic salt and black pepper, producing a smooth, seasoned cream cheese blend. Each jalapeño half is filled with this mixture then wrapped fully or partially with bacon slices.

Placed on a rack over a cookie sheet and baked at 400°F for around 25 minutes, the bacon crisps while the cheese filling melts and the jalapeños tenderize. The result is a mix of smoky, spicy, creamy, and salty flavors, with contrasting textures of crisp bacon and soft cheese. These poppers work well as finger foods or party snacks.

Alternative cooking methods include air frying at 350°F for about 15 minutes or grilling on medium heat with turning, both yielding similarly cooked poppers with smoky flavor.

Ingredients

Servings
  • 12 jalapeños
  • 8 ounces cream cheese
  • 1 cup pepper jack cheese shredded (or Colby Jack for less spice)
  • 1/2 tsp garlic salt
  • black pepper to taste
  • 1 package Bacon (not thick cut)

Instructions

  1. Pre-heat oven to 400 degrees. Cut jalapeños in half (lengthwise), then remove all seeds and membranes. They should look like little green boats.
  2. Mix together the cream cheese, Colby Jack cheese, garlic salt, and pepper in a medium sized bowl. Spread cheese mixture into the jalapeños.
  3. Wrap each cheese filled jalapeño with a slice of bacon. Smaller jalapeños can be wrapped in a half slice of bacon.
  4. Place on rack over a cookie sheet. Bake at 400 degrees for 25 minutes or until bacon is done cooking to desired crispiness.
  5. Serve with ranch dressing or BBQ sauce for dipping.
