Description
This recipe takes pre-cooked little smokies and enhances them by wrapping each with bacon slices cut into smaller sections. The bacon is held in place with toothpicks to maintain coverage during cooking. The sausages coated in a mixture of packed brown sugar, cayenne pepper, and optional black pepper are arranged on a foil-lined pan to catch drippings and facilitate crisping. The baking process at moderate oven temperature slowly crisps the bacon while melting the sugar mixture into a sticky coating. Optional finishing under the broiler adds extra crispness and caramelization. The result is bite-sized treats with a contrast of crisp bacon, sugary seasoning, and smoky sausage flavor. They are convenient for parties and pair well with dipping sauces or as hearty appetizers.
Ingredients
- 16 oz little smokies I use Hillshire Farm brand, package, or small cooked sausages
- 15 lices Bacon each cut into 3 smaller sections
- 3/4 cup light brown sugar packed
- 1/2 tsp cayenne pepper more or less, according to your tastes
- black pepper optional, pinch
Instructions
- Prepare a jelly roll pan (or large baking sheet with a rim), with a layer of aluminum foil, lightly coated with non-stick cooking spray. Set aside. Preheat oven to 350 F degrees.
- Pat sausages dry with a paper towel and wrap each individual sausage with a piece of the cut bacon. Secure with a toothpick.
- Add brown sugar, cayenne and black pepper to a large resealable plastic bag. Use a spoon to combine the sugar with seasonings. Add several bacon wrapped sausages, seal bag and shake gently to coat. Repeat with all remaining sausages.
- Line sugar rubbed sausages on prepared baking sheet and bake 30 -35 minutes, until bacon is browned. For some extra crispness, broil for a couple of minutes after baking.
Notes
- For a barbecue variation, baste the bacon-wrapped sausages with barbecue sauce after baking and broil until the sauce becomes sticky, about 3-4 minutes.
