Description

Bacon Wrapped Meatloaf begins by gently sautéing onions in olive oil to soften their bite, which can be skipped if preferred. Ground beef is combined with crushed crackers for texture, finely diced green bell pepper for mild sweetness, eggs and milk as binders, fresh parsley, and a seasoning blend of Italian herbs, dry mustard, Worcestershire sauce, salt, and pepper. A third of the prepared ketchup and chili sauce glaze is incorporated directly into the meat mixture to integrate flavor.

The shaped loaf is placed on parchment-lined rack-lined baking sheet and wrapped in overlapping bacon slices, which crisp up during baking and contribute a smoky richness. The remaining glaze is brushed on before and midway through the 75-minute bake to build layers of tangy sweetness. A meat thermometer guides cooking until the internal temperature reaches 160°F.

After baking, a 15-minute rest period is recommended to allow the meatloaf to firm up and juices to redistribute for cleaner slices. This meatloaf is filling and flavorful, suitable for a main meal accompanied by classic sides such as mashed potatoes or steamed vegetables.

  • 1 small onion finely diced
  • 1 tablespoon olive oil
  • 2 pounds ground beef lean
  • 1 cup crackers saltines or Ritz, crushed
  • ½ green bell pepper finely diced
  • 2 egg
  • ¼ cup milk
  • ¼ cup parsley chopped, fresh
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dry mustard powder
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon salt or to taste
  • ½ teaspoon black pepper or to taste
  • 8 to 10 lices Bacon

Meatloaf Glaze

  • cup ketchup
  • cup chili sauce

Instructions

  1. Preheat the oven to 375°F.
  2. Combine the glaze ingredients and set aside.
  3. In a small skillet, cook the onion in oil over medium heat for 5 minutes or until tender—this step is optional but produces a milder onion flavor. Cool completely.
  4. In a large bowl, add the cooled onion, beef, cracker crumbs, bell pepper, eggs, milk, parsley, Italian seasoning, dry mustard, Worcestershire sauce, ¼ cup of glaze, and salt and pepper. Using your hands, very gently mix until combined.
  5. Line a rimmed baking pan with foil and top with metal rack. Add a piece of parchment paper just slightly larger than your meat loaf will be.
  6. Form beef into a 9x5-inch loaf and place on the parchment paper. Brush with glaze.
  7. Wrap meatloaf with bacon tucking the ends under the bottom of the loaf. Brush the loaf with the glaze mixture and bake 45 minutes.
  8. Brush again with glaze and bake another 30 minutes or until meatloaf reaches 160°F.
  9. Rest 15 minutes before slicing.
