Bacon Wrapped Meatloaf

Bacon Wrapped Meatloaf is a savory loaf of seasoned ground beef mixed with sauteed onion and garlic, beef broth, Worcestershire sauce, eggs, and breadcrumbs. The meatloaf is coated with ketchup, wrapped in bacon slices, and baked until the bacon crisps and the internal meat temperature reaches 160°F. The result is a flavorful, moist meatloaf with a smoky bacon exterior and a tender interior, topped with parsley for freshness.

Description

This Bacon Wrapped Meatloaf starts by softening diced onion and garlic in olive oil before combining with lean ground beef, kosher salt, black pepper, beef broth, Worcestershire sauce, eggs, and Italian-style breadcrumbs. This mixture is shaped into a loaf on a baking sheet and spread with ketchup to add moisture and tang.

The loaf is then wrapped with strips of regular cut bacon (not thick cut) to ensure crisping and brushed again with ketchup. Baking at 325°F for an hour ensures even cooking; the bacon crisps while the meatloaf remains moist and flavorful. Resting before slicing allows juices to redistribute.

The dish balances smoky, savory, and slightly tangy flavors with a moist texture from broth and seasoning. It works well as a hearty entrée that pairs nicely with classic sides like mashed potatoes or roasted vegetables.

Monitoring the meatloaf near the end of baking can prevent over-browning of the bacon. Covering the top with foil if needed will help. Using 90% lean beef reduces grease without sacrificing flavor.

Ingredients

Servings
  • 1 tablespoon olive oil
  • 1 onion finely diced
  • 2 teaspoons garlic minced
  • 2 1/2 pounds ground beef 90% lean
  • 1 1/4 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 egg
  • 3/4 cup Italian-style breadcrumbs
  • 1/2 cup ketchup divided use
  • 10 lices Bacon
  • 1 tablespoon parsley chopped, fresh
  • cooking spray

Instructions

  1. Preheat the oven to 325 degrees F. Coat a sheet pan with cooking spray.
  2. Heat the olive oil in a small pan over medium heat. Add the onion and cook for 4-5 minutes or until softened. Add the garlic and cook for 30 more seconds.
  3. Place the garlic and onion mixture in a large bowl along with the ground beef, salt, pepper, beef broth, Worcestershire sauce, eggs and breadcrumbs. Stir well to combine.
  4. Place the beef mixture on the sheet pan and shape into a loaf. Spread 1/4 cup of the ketchup over the loaf.
  5. Wrap the bacon slices around the loaf, tucking the ends under the bottom. Brush the remaining ketchup over the bacon.
  6. Bake for one hour or until a thermometer inserted into the center of the meat loaf registers 160 degrees F.
  7. Let the meatloaf rest for 5 minutes. Sprinkle parsley over the top. Slice, then serve.

Notes

  • Use 90% lean ground beef for flavor without excess grease.
  • Avoid thick-cut bacon since it will not crisp properly within the baking time.
  • If bacon appears too browned before meat is cooked through, cover the top loosely with foil to prevent burning.
