Bacon Wrapped Pineapple with Honey Chipotle Glaze
Description
Bacon Wrapped Pineapple with Honey Chipotle Glaze starts with bite-sized pineapple pieces wrapped in halved strips of thick-cut bacon, secured with toothpicks. Baking on a foil-lined sheet allows the bacon to crisp without sticking. The glaze is a smooth blend of honey, a chipotle pepper from adobo sauce, and water to thin it. The smoky heat of chipotle combined with honey balances the fruit's sweetness and bacon's saltiness.
After coating the wrapped pineapple with glaze, the items bake at 400°F until the bacon crisps and caramelizes. A second glaze coat can be applied near serving for extra flavor. This dish can be assembled a day or two in advance and refrigerated before glazing and baking.
The recipe notes recommend freezing leftover chipotles for future use and applying the glaze shortly before serving to keep the bacon crisp and flavorful at the table.
Ingredients
- 1 pineapple chopped into bite sized pieces
- 1 pound Bacon thick-cut
- Toothpicks
- 1/3 cup honey
- 1 chipotle pepper
- 1 tablespoon water
Instructions
- Preheat your oven to 400 degrees F.
- Line a large baking sheet with foil (or don't. It just makes for easier cleanup.) No need to grease it.
- Chop up a pineapple into bitesize pieces. Like 1 to 2 inch pieces (see photo).
- Slice each strip of bacon in half. (I didn't do each strip, I just took the whole thing out of the package, put it on the cutting board, and chopped it once.)
- Wrap each piece of pineapple in bacon and secure with a toothpick. Place on the baking sheet. Repeat with the remaining bacon and pineapple. You may have extra pineapple, so make sure you don't touch all of it with raw bacon-y hands.
- In a blender or food processor, add the honey and chipotle pepper. (I added mine straight from the freezer*)
- Blend until smooth. I added about a tablespoon of water to help it blend.
- Once the glaze is smooth, pour it into 2 small bowls.
- Use a pastry brush and one of the bowls to coat each bacon wrapped pineapple. Don't be stingy! (But also make sure there is plenty of glaze left for when they come out of the oven.)
- Bake at 400 for about 20 minutes. When the bacon is as crispy as you like it, remove from the oven and use a (clean) pastry brush and the second bowl of glaze to coat each one again.
- Serve hot!
Notes
- Wrap pineapple bites in bacon and secure each with a toothpick for easy handling.
- Use chipotle pepper from a can of chipotle peppers in adobo sauce; freeze leftovers for future recipes.
- Apply the second coat of glaze just before serving to keep bacon crispy and flavorful.
- You can prepare the skewers 1-2 days ahead and keep refrigerated, then glaze and bake when ready.
