  • 6 lices Bacon *can vary, see note
  • 12 large sea scallops not bay scallops
  • 1 tablespoon butter melted, salted
  • 1 clove garlic minced, optional
  • ½ teaspoon lemon pepper seasoning
  • 1 teaspoon parsley chopped, fresh
  • salt to taste
  • black pepper to taste

Instructions

  1. Place short wooden skewers in water to soak for 30 minutes.
  2. Place bacon in a frying pan and cook about 3-4 minute per side or until just slightly cooked and some of the fat has rendered out. Bacon should not be crisp.
  3. Pat the scallops dry with paper towel and season with salt & pepper to taste.
  4. Wrap bacon around the scallops and thread 2 to 3 scallops onto each skewer leaving a little bit of space between each scallop.
  5. In a small bowl, mix the melted butter with garlic, parsley, and lemon pepper. Brush over scallops.
  6. Place an oven rack 6-inches from the broiler and Preheat the broiler to high heat.
  7. Line a rimmed baking sheet with foil.
  8. Place the scallops on the prepared pan and broil for 8 to 10 minutes, flipping over after 3 minutes. Cook just until bacon is crisp and scallops are cooked through, do not overcook.

Notes

  • For large scallops, use one slice of bacon per scallop; smaller scallops may need only half a slice or can be wrapped two to one slice.
  • Soak wooden skewers for 30 minutes before use to prevent burning during cooking.
  • Grill scallop skewers over medium heat for 6-8 minutes until bacon crisps; avoid overcooking to keep scallops tender.
  • Air frying is an alternative: cook at 350°F for 11-13 minutes, watching closely to finish when bacon is crisp and scallops are cooked.
