Bacon Wrapped Smokies
Description
This recipe involves wrapping each small smoked sausage (Little Smokies) with a third of a bacon strip secured by toothpicks, then baking on a rack to allow the bacon to crisp evenly. After initial baking, a glaze made from brown sugar and ketchup is brushed on and the smokies are baked longer to develop a sticky and sweet coating.
The bacon crisps around the smokies, providing saltiness and texture, while the brown sugar-ketchup glaze adds a balance of sweetness and tang. This interplay of smoky, salty, and sweet flavors defines the appeal of these bites.
The recipe yields approximately eight servings of five smokies each, suitable for parties or game day snacks. They can be served warm and handled easily as finger food.
Storage instructions recommend refrigerating leftovers up to four days. The bacon wrapping can be prepared a day ahead, making this a convenient option for advance preparation.
Ingredients
- 1 (14 ounce) package little smokies (about 40 links, see note 1)
- 1 pound Bacon each strip cut into thirds (see note 2)
- 1/2 cup brown sugar
- 1/2 cup ketchup
Instructions
- Preheat oven to 400 degrees. Prepare a rimmed baking sheet with foil and a baking rack.
- Working with one Smokie at a time, wrap in bacon and secure with a toothpick. Place on prepared baking sheet. Repeat with remaining smokies and bacon.
- Bake for 30 minutes. Meanwhile, whisk brown sugar and ketchup together in a small bowl.
- Brush or pour barbecue sauce over the Smokies. Return to oven and bake until hot and sticky, about 15 minutes longer. Serve warm.

- Cutting each bacon strip into thirds provides a balanced bacon-to-sausage ratio for wrapping.
- This recipe yields eight servings of five smokies each, ideal for gatherings but easily scalable.
- Leftovers store well refrigerated for up to four days.
- Smokies can be wrapped in bacon a day ahead and refrigerated before baking.
