Bacon-Wrapped Spinach & Goat Cheese Chicken combines tender chicken breasts with a flavorful stuffing made from goat cheese, Parmesan, minced garlic, and spinach. The chicken is stuffed by creating a pocket and filling it evenly, then brushed with mayonnaise and wrapped securely in strips of bacon. Seasoned with salt, pepper, and a drizzle of olive oil, the bacon-wrapped chicken is baked at 375°F for about an hour, ensuring the chicken is cooked through. For a crisper bacon texture, finishing under the broiler briefly is recommended.

Ingredients
- 4 chicken breast boneless, skinless
- 4 oz. goat cheese room temperature
- 2-3 tbsp. Parmesan Cheese grated
- 4 garlic minced, cloves
- 6 oz spinach thawed and squeezed dry, frozen
- 2-3 tbsp mayonnaise
- 8-12 lices Bacon
- salt to taste
- black pepper to taste
- olive oil
Instructions
- Preheat oven to 375°.
- Create pockets in the chicken for stuffing by slicing the chicken breast down the side and as far back as you can without cutting through the other side.
- In a medium bowl, combine the goat cheese, parmesan cheese, garlic, spinach and your desired amount of salt & pepper. Spoon the goat cheese mixture into each chicken breast and spread around evenly.
- Brush mayo on the exterior of each chicken breast and season with salt and pepper. Wrap bacon around chicken breasts and secure with toothpicks. Season wrapped chicken breasts with some more pepper and drizzle a little bit of olive oil over the bacon.
- Bake for an hour (on a wire rack with a baking sheet under it) or when the chicken is no longer pink. For crispier bacon, after baking in the oven, remove toothpicks and place the pan of chicken under the broiler for a minute or two, or until the bacon gets nice & crispy. Enjoy!
