Bacon Wrapped Stuffed Chicken Breast (One Pan Meal)

This recipe for Bacon Wrapped Stuffed Chicken Breast creates a satisfying one-pan meal combining tender chicken breasts filled with a creamy cheese mixture and wrapped in crispy bacon. Halved potatoes roast alongside, absorbing juices and seasoning for a complete dinner. The contrast of the rich, melty cheeses and crispy bacon encasing moist chicken makes each bite flavorful and hearty, while the roasted potatoes add a comforting starch component cooked together for convenience.

Description

Bacon Wrapped Stuffed Chicken Breast (One Pan Meal) features boneless, skinless chicken breasts that are slit lengthwise to create pockets filled with a blend of cream cheese, shredded cheddar, mozzarella, chopped parsley, and garlic powder. Each stuffed breast is seasoned, then wrapped with two slices of bacon, which crisps up during baking, adding a smoky and crunchy texture to the tender chicken inside. Alongside the chicken, halved or chopped potatoes are scattered on the sheet pan, seasoned and coated with cooking spray before roasting.

The oven cooking method allows the chicken to cook through while maintaining juicy interior cheese pockets, and the bacon crisps nicely on top. The potatoes roast to golden, tender pieces, balancing the protein with a mild, earthy flavor. This meal cooks entirely on one pan, simplifying cleanup.

Serve the chicken breasts immediately after broiling to enjoy the bacon at its crispiest. Garnishing with chopped parsley adds a fresh herbal note and color contrast. This dish pairs well with a side salad or steamed vegetables if extra greens are desired.

Ingredients

Servings
  • cooking spray
  • 4 chicken breast boneless skinless
  • 2 ounces cream cheese softened
  • 1/4 cup cheddar cheese shredded
  • 1/4 cup mozzarella cheese shredded
  • 2 teaspoons parsley finely chopped
  • 1/4 teaspoon garlic powder
  • salt to taste
  • black pepper to taste
  • 8 lices Bacon
  • 1 pound potato halved (can also use regular sized potatoes cut into 1 inch pieces, new, small
  • parsley optional garnish, chopped

Instructions

  1. Preheat the oven to 400 degrees F. Line a sheet pan with foil and coat with cooking spray.
  2. Using a small knife, cut a slit lengthwise partway across each chicken breast to create a deep pocket.
  3. In a small bowl mix together the cream cheese, cheddar, mozzarella, parsley and garlic powder. Season with salt and pepper to taste.
  4. Spoon the cheese mixture evenly into the pocket of each chicken breast. Alternatively you can put the filling into a plastic bag and snip the tip to create a makeshift pastry bag to squeeze the filling into the chicken.
  5. Season the top of each chicken breast with salt and pepper then wrap 2 slices of bacon around each chicken breast.
  6. Place the chicken breasts on the sheet pan; scatter the potatoes around the chicken. Coat the potatoes in cooking spray and season with salt and pepper.
  7. Place in the oven and bake for 40 minutes. Broil for an additional 3-5 minutes or until bacon is browned and crispy.
  8. Serve immediately, with chopped parsley as a garnish if desired.
