Bacon Wrapped Stuffed Dates Recipe

Bacon Wrapped Stuffed Dates consist of Medjool dates filled with creamy goat cheese and wrapped in half strips of regular cut bacon, then baked until the bacon crisps. The combination creates a sweet and savory appetizer with tender, juicy filling and a salty, crunchy exterior. A drizzle of honey adds a subtle sweetness that complements the dates and enriches the flavors. These bites offer a pleasing texture contrast and a balanced mouthfeel.

Description

This appetizer begins by pitting and halving sweet, large Medjool dates before stuffing each with soft goat cheese, which adds tang and creaminess. Each filled date is wrapped with a half-strip of regular cut bacon, providing a smoky, salty crust that crisps during baking. The baking sheet is lined with parchment to catch drippings and facilitate easy cleanup.

Honey drizzled before baking lends an extra layer of sweetness that caramelizes slightly, enhancing complexity. Baking at 375°F for 12-15 minutes ensures the bacon crisps without overcooking the delicate filling.

These stuffed dates work well as cocktail appetizers or party finger food, offering rich yet approachable flavor combinations. They can be prepared in advance and baked shortly before serving.
