Description
Baharat Spice Blend incorporates seven spices providing a layered flavor profile used widely in Middle Eastern cooking. The mixture of warm spices like cinnamon, cloves, and cardamom alongside black pepper, paprika, cumin, and coriander creates an aromatic blend that can be used as a seasoning or condiment in various dishes.
The recipe involves toasting whole spices such as cumin seeds, coriander seeds, cloves, and cardamom pods to unlock their aromatic oils before grinding them and mixing with ground spices. This adds depth beyond simply mixing ground spices together.
Baharat can be used as a dry rub for meats, roasted vegetables like whole cauliflower, or tofu. It also works well blended with oil and vinegar or lemon juice to dress salads, and added to cooking liquids like vegetable stock for red lentils. The spice blend provides warm, earthy, and slightly sweet flavors enhancing savory ingredients.
Storing the blend in an airtight container preserves its freshness and potency. Using freshly toasted and ground whole spices whenever possible will result in the most vibrant flavor.
Ingredients
- 1 tablespoon black pepper
- 1 tablespoon paprika
- 1 tablespoon cumin 4 teaspoons cumin seeds, ground
- 2 teaspoon ground coriander 1 ½ teaspoon coriander seeds
- 2 teaspoon ground cinnamon
- 2 teaspoon cloves 2 ½ teaspoon whole cloves, ground
- ½ teaspoon ground cardamom 6 pods
Instructions
- Mix all the spices together and store in an airtight container.
Whole spices
- If using any whole spices, heat a dry (no oil) frying pan. Add all the whole spices and toast, stirring occassionally,for 3-4 minutes until lightly toasted and fragrant.
- Add to a spice grinder or a mortar and pestle and grind to a powder. Mix with the ground spices. Store in an airtight container.
- Note: If using cardamom pods, toast the pods as above, then crack open remove the seeds to grind and discard the pod husks.
Notes
- Toast whole spices in a dry pan until fragrant to enhance flavor before grinding.
- Use Baharat as a rub on meats, vegetables, tofu, or in salad dressings with oil and acid like lemon juice.
- Add a teaspoon to cooking liquids, such as vegetable stock for lentils, to infuse warm spice notes.
- Store the spice blend airtight to keep it fresh and aromatic.
