Description

This recipe begins with firm, medium-sized apples sliced very thinly to approximately 1/8 inch thickness. The slices retain their cores for visual appeal but can be cored if preferred. After arranging in a single layer on a lined baking sheet, the slices are sprinkled evenly with a mixture of granulated sugar, cinnamon, and a pinch of nutmeg.

The baking occurs at a low temperature (225°F/107°C) for 1½ to 2 hours, depending on slice thickness and apple water content. The goal is to dry the slices thoroughly until crisp without burning. The finished chips offer a delicate, crunchy texture and flavored sweetness enhanced by the spices.

Instructions

  1. Preheat the oven to 225 degrees F (107 degrees C). Slice apples into very thin rings. I leave the core in because I think it makes a prettier apple chip, but you can remove it if you like.
  2. Place the apple rings on a lined baking sheet in a single layer.
  3. In a small bowl, mix together sugar and spices. Sprinkle over apple rings.
  4. Place the baking sheet in the oven. Baking time will depend on the thickness and water content of your apple slices. They should be done in 1 ½ to 2 hours. You’ll know they’re finished when they’re crisp.

Notes

  • Slice apples thinly (around 1/8 inch) for the best crispness; thicker slices will remain softer but still tasty.
  • Use crisp apple varieties and avoid softer types like Red Delicious or McIntosh, which don't bake crisp as effectively.
  • The chips can be eaten as a snack or used as a topping for salads and oatmeal.
