Description
This recipe begins by flattening four chicken breasts to an even thickness and seasoning them. The chicken is lightly seared in a small amount of oil to develop a browned exterior without fully cooking. It is then baked covered with foil to retain moisture for 15 minutes at 400°F.
Meanwhile, a balsamic glaze is prepared by simmering balsamic vinegar with sugar, honey, and salt until reduced by half, creating a thick, syrupy consistency. After the initial baking, the foil is removed and some glaze is brushed over the chicken before returning it to the oven uncovered for an additional 5-10 minutes until fully cooked.
The chicken finished this way is juicy with a balanced sweetness and tang from the glaze, complemented by the herbaceous notes from Italian seasoning. Leftover glaze can be stored and used to complement other dishes such as steak, vegetables, or potatoes.
Ingredients
- 4 chicken breast pounded to even thickness, boneless skinless

Balsamic Glaze
- 1 cup balsamic vinegar
- ⅓ cup sugar
- 1 tablespoon honey
- ½ teaspoon salt
Instructions
- Preheat oven to 400 degrees. Season chicken with salt, pepper, and Italian seasoning.
- Drizzle a skillet with oil (about 2 teaspoons is fine) and cook chicken for 1-2 minutes on each side over medium-high heat, just to brown the very outside of the chicken.
- Transfer chicken to a greased baking sheet or large casserole dish. Cover with foil and bake in preheated oven for 15 minutes.
- While chicken is cooking, make the balsamic glaze. In a small-medium sauce pan whisk together balsamic vinegar, sugar, honey, and salt. Bring to a boil over medium-high heat, then reduce to medium-low heat and allow to simmer while chicken is cooking. The liquid should reduce by half after 10-15 minutes. Remove from heat.
- Uncover chicken and brush some of the balsamic glaze on top of the chicken. Return to oven (uncovered) and bake another 5-10 minutes until chicken is completely cooked through. Drizzle remaining balsamic glaze over chicken and serve. Garnish with fresh parsley or rosemary if desired.
Notes
- Keep any extra balsamic glaze refrigerated in an airtight container for later use.
- Balsamic glaze pairs well with chicken and can also be used over steak, vegetables, or potatoes.
