Baked BBQ Chicken Drumsticks
Description
This recipe seasons chicken drumsticks thoroughly with a blend of spices including garlic powder, onion powder, chili powder, smoked paprika, ground ginger, salt, and black pepper. After rubbing the spices onto the chicken, chilling the drumsticks for at least 30 minutes helps deepen the seasoning penetration. Baking them on a wire rack in the oven at 350°F allows even cooking and renders the skin slightly crisp.
Once initial baking is done, the drumsticks are brushed with BBQ sauce and returned to the oven to develop a flavorful, sticky coating. Flipping and reapplying the sauce ensures an even glaze. Cooking times may vary by oven, and additional baking or adjustment to 400°F can be done for desired doneness.
This dish serves well fresh from the oven, offering juicy meat with a smoky, warmly spiced, and tangy BBQ flavor. Leftovers store safely in the refrigerator for several days and can be reheated in the microwave. The recipe notes also suggest alternatives like chicken breast or thighs and encourage using preferred BBQ sauce styles.
Ingredients
- 4 pounds chicken drumstick about 12
- 2 tablespoons garlic powder
- 2 tablespoons onion powder
- 2 tablespoons chili powder
- 2 tablespoons smoked paprika
- 1 tablespoon ground ginger
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 cups BBQ sauce or low sugar, sugar-free
Instructions
- In a mixing bowl, add drumsticks, garlic powder, onion powder, chili powder, paprika, ginger, salt, and pepper. Using your clean hands, generously rub the seasoning all over the drumsticks.
- Refrigerate to allow the seasonings to penetrate the meat, for at least 30 minutes.
- Meanwhile, preheat the oven to 350 F and line a roasting tin with aluminum foil for easy cleanup, if desired.
- Transfer the chicken drumsticks to the prepared roasting tin arranging them on the wire rack with a little space in between.
- Bake, in the middle of the oven, for 40-50 minutes, flipping half time.
- When the time is up, remove from the oven and brush each chicken drumstick with BBQ sauce. Return to the oven and bake for 10-15 minutes, then flip the drumsticks and repeat the process once again.
- Serve immediately and enjoy!
Notes
- This recipe yields about 2 drumsticks per serving.
- Oven temperatures vary; you may need to add 15-20 minutes to cooking time or increase temperature to 400°F.
- Leftover drumsticks keep well refrigerated for up to 5 days and reheat easily in the microwave.
- Chicken drumsticks can be frozen in a ziplock bag for up to 3 months.
- Substitute chicken breast or thighs if desired, and use your favorite BBQ sauce, including low sugar or sugar-free options.
