Description

Begin by preheating the oven and preparing a baking dish with cooking spray. Bacon is partially cooked in a skillet until some fat renders but it's not fully crisp. After removing the bacon, about one tablespoon of the fat remains to cook diced onions until translucent and seasoned with salt and pepper. The pork and beans, partially drained, are combined in the skillet with yellow mustard, brown sugar, molasses, ketchup, and apple cider vinegar to create a richly flavored sauce. This mixture is transferred to the baking dish and topped with the partially cooked bacon pieces. Baking for two hours allows the sauce to thicken and the bacon to brown, producing a dish that melds smoky, sweet, and tangy notes. Parsley sprinkled on top adds fresh color before serving.

  • 8 lices Bacon cut into 1/2 inch pieces
  • 1/2 cup onion finely diced
  • 3 ounce cans pork and beans partially drained
  • 3 tablespoons yellow mustard
  • 1/4 cup brown sugar
  • 1/4 cup molasses
  • 1/4 cup ketchup
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon parsley chopped
  • cooking spray
  • salt to taste
  • black pepper to taste

Instructions

  1. Preheat the oven to 350 degrees F. Coat a 2 quart baking dish with cooking spray.
  2. Cook the bacon in a skillet over medium heat until partially done. Remove the bacon from the pan.
  3. Pour some of the bacon fat out of the pan, leaving about 1 tablespoon of fat in the pan.
  4. Add the onions to the pan and cook for 3-5 minutes or until translucent. Season the onions with salt and pepper to taste.
  5. Add the beans, mustard, brown sugar, molasses, ketchup and apple cider vinegar to the pan. Stir to combine.
  6. Pour the bean mixture into the prepared dish. Layer the pieces of bacon over the top.
  7. Bake for 2 hours or until bean mixture has thickened and bacon is browned. Stir to combine.
  8. Sprinkle with parsley, then serve immediately.
