Ingredients
- 100 gram onion chopped
- 40 ml olive oil
- 1 clove garlic chopped
- 400 gram tomato chopped, or one tin
- 2 teaspoons cumin ground
- 1/4 bunch Coriander chopped
- 250 gram Mexican chorizo cooked
- 400 gram cannellini beans 1 x can drained
- 1/2 teaspoon salt fresh pepper
- 250 gram Bacon rashers
- 4 whole egg poached
Instructions
- Heat a Medium pan with the olive oil and add the onion, garlic and cumin and saute till softened.
- Add the tomatoes and cook till simmering
- Add the coriander, chorizo and beans and simmer on low until simmering and well combined.
- Season with salt and pepper.
- Serve with crisped bacon and poached eggs.
