Baked Beans, mexican Chorizo & Coriander

This dish combines sautéed onions, garlic, and cumin with chopped tomatoes, fresh coriander, cooked Mexican chorizo, and cannellini beans to create a savory, spiced bean stew. Crisp bacon and poached eggs are served alongside for added texture and richness. The mix offers a hearty and well-seasoned meal option featuring a balance of smoky, spicy, and fresh herb flavors.

Description

Baked Beans, Mexican Chorizo & Coriander begins by softening chopped onions, garlic, and ground cumin in olive oil to build a fragrant base. Chopped or canned tomatoes are added and cooked until simmering, infusing the mixture with acidity and depth. Fresh coriander is stirred in along with cooked Mexican chorizo and drained cannellini beans, creating a rich combination of smoky, spicy meat with tender beans in a tomato-spiced sauce.

The dish is simmered gently until flavors meld and the sauce thickens slightly. It is then seasoned with salt and freshly ground pepper to taste, further balancing the dish’s savory profile. Crispy rashers of bacon provide a contrasting crunch and smoky saltiness, while softly poached eggs add creaminess and protein, making it a satisfying, complete meal.

Serve this collection warm as a comforting lunch or dinner, where the blend of herbs, spiced meat, beans, and eggs creates variety in texture and flavor. The coriander adds a fresh herbal note that lightens the dish’s richness.
