Description

The recipe begins by cooking bacon until slightly crispy, then using the rendered fat to sauté diced onions and green bell peppers. These vegetables add sweetness and a subtle crunch. A sauce made from barbecue sauce, brown sugar, smoked paprika, and garlic powder is whisked together, creating a smoky and sweet base. This sauce is combined with the baked beans and sautéed vegetables. The mixture is baked at 350 degrees Fahrenheit for two hours, then chopped bacon is stirred in and the beans bake further for an additional 45 to 60 minutes. This slow baking reduces the sauce to a thick consistency and melds the flavors.   • 2 cans baked beans (28 ounces each)
  • ¾ cup barbecue sauce
  • ¼ cup brown sugar
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1 red onion (finely chopped)
  • 1 green bell pepper (finely chopped)
  • 8 lices Bacon

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.  
  2. Cook the bacon in a large skillet over medium high heat until cooked through and slightly crispy.  Move the bacon to a plate lined with paper towels to cool. 
  3. Add the diced onions and pepper peppers to the skillet with the bacon grease and sauté for 2-3 minutes until soft. Remove from heat. 
  4. In a large bowl, whisk together the barbecue sauce, brown sugar, paprika and garlic powder. 
  5. Stir in the baked beans and the sautéed onions and pepper. 
  6. Pour the mixture in a baking dish (I used a 3 quart dish) and bake for 2 hours. 
  7. When the beans are baking, chop the cooked bacon.  Reserve a small amount of chopped bacon for the topping and stir the remaining bacon into the baked beans. 
  8. Cook for 45-60 more minutes until the sauce of your beans cooks down to your desired consistency.  
  9. Remove from the oven, let the beans set for 5-10 minutes.  Then serve topped with the reserved chopped bacon and enjoy! 

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • Alternatively, prepare the baked beans in a crock pot by cooking on low for 6-8 hours or on high for 3-4 hours.
