  • 1 Tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon brown sugar optional
  • ½ teaspoon onion powder

Instructions

  1. Preheat your oven to 425°F.
  2. Pat the chicken thighs dry with paper towels.
  3. In a small bowl, mix together the spices.
  4. Rub olive oil on chicken and then the spice mixture all over the chicken thighs.
  5. Line a baking sheet with aluminum foil or parchment paper for easier cleanup. Place a wire rack on top of the baking sheet if you have one — this will allow air to circulate around the chicken, helping it to crisp up on all sides.
  6. Place the chicken thighs on the wire rack. Make sure the thighs aren’t touching each other.
  7. Bake the chicken in the preheated oven for 18-20 minutes, or until the internal temperature reaches 165°F. To get the thighs a bit crispy, you can broil them for an additional 2-3 minutes, watching closely to avoid burning.
  8. Let the chicken rest for 5 minutes before serving.

  • Storage: Let the chicken cool completely before storing it in an airtight container—keep in the fridge for up to 4 days or freeze for up to 3 months. Reheat in a 350°F oven for 10-15 minutes or use the microwave for a quicker option, but avoid overcooking to keep it juicy.
