Baked Breakfast Quinoa with Plums and Pistachios

Baked Breakfast Quinoa with Plums and Pistachios is a warm, nourishing dish combining quinoa cooked with milk and spices, topped with sweet stewed plums, crunchy pistachios, and yogurt. Baking the quinoa softens the grains while absorbing the aromatic vanilla, cinnamon, and nutmeg. The stewed plums add natural sweetness that pairs nicely with creamy yogurt and nutty pistachios.

Description

This recipe for Baked Breakfast Quinoa with Plums and Pistachios starts by combining rinsed quinoa with milk, water, vanilla extract, cinnamon, salt, and freshly grated nutmeg in a baking dish. The mixture bakes at 350°F in two stages, first 20 minutes, then after stirring, another 15 to 20 minutes until the liquid is mostly absorbed and the quinoa is tender.

While the quinoa bakes, plums are stewed gently with water and honey until soft and juicy. Serving involves layering the baked quinoa with a splash of milk (such as coconut milk), a dollop of yogurt, chopped pistachios for crunch, and spoonfuls of the stewed plums along with their syrup. This combination provides a blend of creamy, sweet, fruity, and nutty textures and flavors suited for a warm breakfast or brunch.

Ingredients

Servings
  • 1 cup quinoa rinsed, uncooked
  • 1 1/2 cups milk
  • 1/4 cup water
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • pinch nutmeg freshly grated
  • 1/4 cup pistachio chopped
  • milk for serving
  • yogurt for serving
  • plums stewed
  • 4 plum sliced
  • 1/2 cup water
  • 1/4 cup honey

Instructions

  1. Preheat the oven to 350 degrees F. Spray a baking dish with nonstick spray.
  2. In a bowl, stir together the quinoa, milk, water, vanilla, cinnamon, salt and nutmeg. Pour it into the baking dish and bake for 20 minutes. Remove from the oven and stir well (to incorporate any of the milk laying on top), then bake for 15 to 20 more minutes until most of the liquid is absorbed.

stewed plums

  1. While the quinoa is cooking, make the plums. Add the plums, water and honey to a saucepan over medium-low heat. Bring the mixture to a simmer and cook, stirring occasionally, until the plums are soft and juicy, about 5 minutes.
  2. To serve the quinoa, scoop some into a bowl and pour milk over top. My favorite here is coconut milk! Add some yogurt and pistachios on too, then spoon some of the plums and juice over it. Devour.
