Baked Brie in Puff Pastry
Description
This recipe wraps a halved wheel of Brie with apricot preserves and toasted almonds inside puff pastry. The edges of the pastry are sealed with egg wash and decorated before baking to a golden, crisp crust. The Brie softens and melts inside, creating a luscious, creamy center balanced by the sweetness of preserves and the crunch of almonds.
The assembly involves careful folding and trimming of the puff pastry to encase the cheese completely, then brushing with egg whites for color and shine. Baking at 400°F for about 20-25 minutes yields a golden exterior and thoroughly warmed cheese.

Ingredients
- ½ (17-ounce) package puff pastry thawed, frozen
- 1 (8-ounce) package Brie cheese rind on, cut in half, round
- ⅛ cup almond optional, sliced; toasted
- ¼ cup apricot preserves or your favorite preserve
- 2 egg white
Instructions
- Lightly grease a pie pan with cooking spray. Preheat the oven to 400°F.
- Slightly roll out the sheet of puff pastry and place over pie pan. Place half the cheese round in the center.
- Add the almonds, then place the top half of the brie cheese on top and press down. Add the preserves on top of the cheese round (you can also add the almonds on top of the preserved if preferred).
- Wash edges of the puff pastry with egg wash and fold the puff pastry up over the cheese round so that the sides meet together. Press together and cut off excess.
- Roll out excess and make any decorative dough pieces. We made leaves. Place on top and brush the rest of the egg wash all over the puff pastry dough.
- Bake for 20-25 minutes.
- Allow the brie to cool for 5 minutes. Serve warm with crackers and apples.
Notes
- Prepare the wrapped Brie in advance, storing it in the refrigerator for up to 24 hours before baking.
- You can freeze the wrapped Brie wrapped in foil for up to one month; bake from frozen at 350°F for 45-50 minutes.
- Store leftovers in an airtight container in the refrigerator for 2-3 days and reheat gently in a low oven until warm.
- Serve with crackers and sliced apples to complement the creamy, sweet flavors.
