  • 1/3 puff pastry recipe
  • 1 Brie cheese 6 inch round
  • ¼ cup cherry jam
  • 1 egg large
  • 1 tablespoon milk whole
  • ¼ candied pecans recipe
  • ½ caramel recipe
  • 2 tablespoons bourbon
  • 1/2 cup dried cherries

Instructions

  1. Preheat the oven to 400°.
  2. Roll out the puff pastry until it is a 16”x16” square on a clean, lightly floured surface.
  3. Place the brie in the center of the puff pastry.
  4. Evenly spread the jam on top of the brie.
  5. Grab the top left corner of the puff pastry and fold it diagonally over the brie cheese.
  6. Next, move to the right of the fold and fold it over the first fold and continue the same gesture around the brie cheese until it’s wrapped up and enclosed. Place on a sheet tray lined with parchment paper.
  7. Whisk together the egg and milk in a small bowl.
  8. Brush the top and sides of the brie in puff pastry in the egg wash and bake at 400° for 25 to 30 minutes or until golden brown on top.
  9. Once the caramel is done, remove the pot from the cooktop and whisk in the bourbon until combined. Garnish Brie en croute with candied pecans, bourbon caramel, and dried cherries.

Notes

  • The Brie en croute can be assembled a day ahead without the egg wash and baking, then refrigerated until ready to bake.
  • Store the baked Brie wrapped in puff pastry in the refrigerator for 3 to 4 days; it does not freeze well.
