Baked Brie with Bacon Sausage Dippers
Description
This recipe uses a whole Brie cheese wheel placed in a baking dish with slits cut into the rind, where fresh rosemary leaves are inserted to impart herbal aroma directly into the melting cheese. Breakfast pork sausages are wrapped tightly in bacon strips seasoned with rosemary leaves, secured with toothpicks, then arranged around the Brie. A generous glaze of honey coats the Brie and bacon-wrapped sausages before baking at 350ºF. The baking time melts the Brie to a creamy texture, crisps the bacon, and fully cooks the sausages while blending the flavors. The final result is an appetizer featuring tender sausage bites balanced with smoky bacon and warm, fragrant cheese, complemented by subtle honey sweetness.
The recipe accommodates variations in Brie size and bacon strip length, allowing adjustments in ingredient quantities.
Ingredients
- 1 Brie cheese see note 1, round
- 3 rosemary sprigs
- 16 pork breakfast links or thin pork sausages
- 16 Bacon see note 2, strips
- 2-3 tablespoon honey
Instructions
- Preheat oven to 350ºF/170ºC.
- Place the brie wheel in the middle of a large round baking dish or pie tin.
- Use a sharp knife to stab several slits in the brie. Push a few leaves of rosemary into each slit.
- Place a strip of bacon on the chopping board. Place a sausage on the end of the bacon along with a couple of rosemary leaves. Then roll the bacon tightly around the sausage. (see the bulk of post for pictures)
- Cut any remaining bacon off, secure the end with a toothpick or cocktail stick, and place it into the baking dish around the brie.
- Repeat with your remaining sausages.
- When you are ready to cook, glaze the bacon and brie with 2 tablespoons of honey. (if your sausages are bigger you might need an extra tablespoon of honey)
- Bake the brie and bacon-wrapped sausages for 25 to 30 minutes until the sausages are fully cooked, the bacon is crispy, and the cheese is molten.
- Remove the cocktail sticks before serving or warn your guests!
Notes
- An 8oz (250g) Brie wheel works well, but you can adjust to your preferred size.
- Depending on the bacon strip size, you may get two bacon-wrapped sausages per strip.
