Ingredients

Servings
  • 8 oz Brie cheese
  • 2 tbsp honey
  • 2 tbsp walnuts chopped
  • 2 tbsp pistachio chopped
  • 4 dried apricot chopped
  • 1 prig thyme optional
  • 2 tbsp pomegranate arils

Instructions

  1. Preheat the oven to 325 degrees F. Gently cut diamonds on the top rind but don't cut into the cheese. This is for easy serving. Place the brie in a cast iron skillet or a shallow baking dish.
  2. Drizzle 1 tablespoon of honey (or more if you like) on the brie and top with chopped walnuts, pistachios, apricots and the thyme sprig.
  3. Bake in the oven for 15 minutes, the top will be soft to the touch and the cheese will still hold its shape.
  4. Take the pan out of the oven, top with pomegranate arils, more thyme and honey if desired.
  5. Serve immediately with crackers or crostini.

Notes

  • You can simply leave out all the toppings and just use honey, maple syrup or agave nectar.
  • Baked brie will stay melted for 15 minutes, however, it'll still be spreadable at room temperature.
  • Store the leftovers in an airtight container and refrigerate for up to 3 days. Reheat in the microwave for 1 to 2 minutes until melty again.
