Baked Buffalo Wings
Description
The Baked Buffalo Wings recipe starts with split chicken wings seasoned with a blend of kosher salt, black pepper, garlic powder, onion powder, and smoked paprika. Lightly sprayed with avocado oil, the wings are baked at 400°F for 30 minutes to brown and crisp the skin. They then remain in a low heat oven for an additional 30 minutes to develop extra crispness without drying out. The Buffalo sauce combines melted butter and hot pepper sauce, whisked together and rested before coating the wings to enhance adhesion and flavor. Tossing the wings in this sauce yields a classic, moderately spicy Buffalo wing.
This preparation method creates a crispy texture on the outside while keeping the meat inside tender. The seasoning mix highlights savory and smoky notes, complementing the buttery heat of the sauce. Serving the wings with blue cheese dip and celery adds a cooling balance to the bold flavors and is traditional for Buffalo-style wings.
The recipe allows for spacing wings on separate sheets to improve even cooking and crispiness. Leftovers can be refrigerated for a few days or frozen, and reheated gently in the microwave or oven to preserve texture. Using sriracha or thicker hot sauces can yield a denser sauce coating. The inclusion of paprika and the oven technique avoid the need for flour dredging to get crisp skin.
Ingredients
- 3 pounds chicken wings split, tips removed
- Avocado oil spray
- 2 teaspoons kosher salt or 1 teaspoon of any other salt, including Morton kosher salt, Diamond Crystal brand
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
Buffalo Sauce:
- 4 tablespoons butter melted
- 4 tablespoons hot pepper sauce
Instructions
- Preheat the oven to 400°F. Line a rimmed baking sheet with high-heat-resistant parchment paper.
- Arrange the chicken wings on the prepared baking sheet. Spray them with oil, then sprinkle them with kosher salt, black pepper, garlic powder, onion powder, and smoked paprika. Give them another quick spray of oil.
- Bake the wings until the skin is browned and crispy, about 30 minutes. Lower the oven to "keep warm" (170°F) and keep the wings in the oven for 30 more minutes to crisp the skin.
- Ten minutes before the wings are ready, prepare the Buffalo sauce: Place the butter in a microwave-safe bowl. Cover it. Microwave until the butter is melted, about 20 seconds. Add the hot sauce and whisk to combine.
- Using tongs, toss the wings in the Buffalo sauce.
- Serve with blue cheese dip and celery sticks.
Notes
- Space wings on two baking sheets for even cooking and better crisping.
- Keep wings in a warm oven after initial baking to enhance skin crispiness.
- Prepare Buffalo sauce 10 minutes before tossing to allow it to thicken for better coating.
- Sriracha or similar thick hot sauces can make a richer Buffalo sauce.
- No flour is needed; the oven method crisps skin well without dredging.
- Store leftovers in an airtight container for 3-4 days; reheat gently in microwave or oven.
- Frozen wings can be stored up to three months in freezer bags.
