Baked Caramel Corn

Baked Caramel Corn features fresh-popped popcorn tossed in a homemade caramel sauce made from brown sugar, butter, and light corn syrup, then baked until golden and crisp. Salted peanuts add a savory balance. Baking low and stirring regularly develops a crunchy coating, making it a classic sweet and salty snack ideal for sharing or storing.

Description

The Baked Caramel Corn recipe begins by popping popcorn using your preferred method and placing it in a large bowl. A caramel sauce is prepared by boiling butter, light corn syrup, brown sugar, and salt until smooth, then adding vanilla extract and baking soda which helps aerate and lighten the caramel. Salted peanuts are stirred into this sauce before combining with the popcorn to evenly coat each piece.

The coated popcorn is spread on parchment-lined baking sheets and baked at a low temperature with stirring every 15 minutes for one hour. This slow baking process caramelizes the sugar evenly, resulting in a crisp, crunchy texture without burning. After baking and cooling, the caramel corn can be stored in airtight containers to maintain freshness.

The mix of sweet caramel and salty peanuts balances flavor, while the soda and vanilla add lift and aroma to the coating. This treat provides a crunchy, sweet, and nutty snack suitable for gatherings, movie nights, or gifting.
