Baked Catfish with Herbs
Description
The recipe layers catfish fillets with a mixture of fresh parsley and dried herbs such as thyme, oregano, and basil, combined with paprika, salt, and black pepper for seasoning. The herb-spiced fish is then topped with a drizzle of melted butter mixed with lemon juice and garlic powder, which imparts richness and brightness during baking. Baking at 350 degrees for 15 to 20 minutes ensures the fillets become opaque and flake easily, which signals doneness without drying out the fish.
The texture is gentle and flaky, while the combination of herbs and lemon complements the mildly sweet catfish. This simple preparation preserves the delicate fish flavor, with the herbs providing an aromatic accompaniment. It can be served with vegetables, rice, or potatoes for a balanced meal.
Check for flakiness near the thickest part of the fillet to avoid overcooking. Using non-stick spray helps prevent sticking and allows the fish to cook evenly. The lemon butter drizzle also helps keep the catfish moist and adds subtle acidity to balance the savory herbs.
Ingredients
- 2 tablespoons parsley fresh, minced
- 1 teaspoon salt
- ¾ teaspoon paprika
- ½ teaspoon thyme dried
- ½ teaspoon oregano dried
- ½ teaspoon basil dried
- ½ teaspoon black pepper ground
- 24 ounces catfish fillet (4 fillets, approx. 6 ounces each)
- Non-stick cooking spray
- 2 tablespoons butter melted
- lemon juice of one
- ¼ teaspoon garlic powder
Instructions
- Preheat the oven to 350 degrees.
- Combine the parsley, salt, paprika, thyme, oregano, basil and pepper in a small bowl.
- Place the fillets on a baking pan that has been coated with non-stick cooking spray.
- Sprinkle the spice-herb mixture over both sides of catfish fillets.
- Add the melted butter, lemon juice and garlic powder to a small bowl. Mix well to combine.
- Drizzle the butter-lemon-garlic mixture over the fillets.
- Bake uncovered for 15-20 minutes or until the fish flakes easily.
Notes
- Catfish is done when it turns opaque and flakes easily with a fork; if it resists, bake a few minutes longer.
