Baked Cauliflower Bites

Baked Cauliflower Bites combine steamed cauliflower with almond flour, shredded cheddar, and spices to create tender, cheesy morsels with a gently spiced flavor profile. The mixture is shaped into small mounds and baked until slightly crisp on the edges, offering a satisfying alternative to traditional potato tots. The preparation involves pulsing the cauliflower finely for a smooth texture, which can be adjusted by chopping manually for more coarseness. These bites are practical for snacking or serving as a side dish and can be baked or pan-fried to preference.

Description

Baked Cauliflower Bites blend cauliflower florets steamed until tender with eggs, almond flour, shredded cheddar cheese, and a combination of kosher salt, black pepper, garlic powder, and cayenne pepper. The ingredients are processed into a cohesive batter and portioned into small mounds before baking in a preheated oven. The method yields soft bites with a slight crust from baking, carrying the mild cauliflower flavor enriched by cheese and warm spices. Texture can be fine or slightly coarse depending on how the cauliflower is prepared.

The bites serve well as a snack or side, providing a way to enjoy a vegetable-based treat without heavy frying. They can be served warm or cold and pair with dipping sauces or as a complement to main dishes. Baking on parchment also limits added fat, but pan-frying is an alternative for a crispier exterior.

Storage is straightforward; leftovers keep in the refrigerator for several days and reheat well in the microwave at low power. Freezing single layers of bites extends shelf life up to three months. Users can adapt the texture by adjusting processing methods and cooking styles to their liking.

Ingredients

Servings
  • olive oil spray form
  • 1 pound cauliflower fresh or frozen, florets
  • 3 egg large
  • 1 teaspoon kosher salt or ½ teaspoon of any other salt, including Morton kosher salt, Diamond Crystal brand
  • ¼ teaspoon black pepper
  • 1 teaspoon garlic powder
  • teaspoon cayenne pepper
  • 1 cup almond flour 4 ounces, superfine
  • 1 cup cheddar cheese shredded; 4 ounces

Instructions

  1. Preheat the oven to 400°F. Line two rimmed baking sheets with high-heat-resistant parchment paper and spray them with olive oil.
  2. Place the cauliflower florets in a large microwave-safe bowl. Add ¼ cup of water. Cover and microwave on high until tender, stirring midway through cooking. Frozen florets will need a total cooking time of about 7 minutes. Fresh florets will need a total cooking time of about 5 minutes.
  3. Drain the cauliflower florets well and place them on a clean kitchen towel to dry. Add them to your food processor and process until coarsely chopped.
  4. Add the eggs, kosher salt, black pepper, garlic powder, and cayenne pepper to the food processor bowl. Briefly process to combine.
  5. Add the almond flour and cheddar and process until combined.
  6. Using a 2-tablespoon scoop, transfer mounds of the mixture to the prepared baking sheets. Each baking sheet should hold 12 mounds, evenly spaced. Gently flatten them, just a little, with the back of a spoon.
  7. Spray the tots with olive oil spray. Bake them until the bottoms are golden brown, about 15 minutes. Flip them to the other side, spray with more oil, and bake until set, about 10 more minutes.
  8. Serve immediately.

Notes

  • Adjust texture by finely chopping cauliflower by hand for more bite instead of processing smooth.
  • Bites can be pan-fried for about 3 minutes per side in a nonstick skillet for a crispier exterior.
  • Store leftovers in an airtight container in the fridge up to 3-4 days; reheat gently in the microwave.
  • Freeze bites flat in single layers using freezer bags for up to three months for longer storage.
