Baked Chicken Breast

Baked Chicken Breast uses a dry rub of smoked paprika, Italian seasoning, garlic, and onion powders with pepper and salt to coat boneless, skinless chicken breasts before baking with butter on top. The high-temperature oven method yields juicy meat with a flavorful crust from the seasoned dry rub and butter melting over the chicken. This straightforward preparation offers a versatile main protein suitable for various meals.

Description

The recipe begins by combining spices for a dry rub, including smoked paprika or regular paprika, Italian seasoning, onion and garlic powders, red pepper flakes, salt, and freshly ground black pepper. The chicken breasts are dried and brushed with olive oil, then thoroughly coated with the spice mixture. A piece of butter is placed on each breast before baking at 450°F, which helps keep the chicken moist while enhancing flavor.

Baking time ranges from 18 to 25 minutes depending on the thickness of the chicken breasts, and the recommended internal temperature is between 165 and 170°F for safety and optimal doneness. Resting the chicken after baking allows juices to redistribute, resulting in tender and juicy slices.

The seasoned crust and butter topping make the chicken flavorful without requiring complex preparation. The recipe mentions that chicken thighs or drumsticks could be used as alternatives, with similar temperature guidelines. Leftover chicken stored properly can be refrigerated up to five days or frozen for three months.

Ingredients

Servings

Dry Rub

  • 1 tablespoon smoked paprika or regular paprika
  • 1 tablespoon Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ¼ teaspoon red pepper flakes
  • ½ teaspoon salt
  • 1 teaspoon black pepper freshly ground

Baked Chicken

  • 2 tablespoon olive oil
  • 3 pounds chicken breast boneless and skinless (about 6)
  • 2 tablespoon butter unsalted, cut into 6 equal size pieces

Instructions

  1. Heat the oven to 450℉
  2. In a small bowl whisk all the dry rub ingredients together; set aside.
  3. Pat the chicken breast dry with a paper towel. Drizzle about 1 tbsp of olive oil over the bottom of a baking dish and brush it over the bottom to cover the entire surface. Place the chicken breasts in the baking dish and brush the remaining olive oil over both sides of the chicken.
  4. Sprinkle half of the rub over one side of the chicken breasts then flip them over and sprinkle the other side with the remaining rub. Use your hands if necessary to make sure the entire breasts are seasoned.
  5. Place a piece of butter on each chicken breast.
  6. Transfer the baking dish to the oven and bake for 18 to 25 minutes. The baking time could differ depending on the thickness of the chicken breast. The breast is cooked when it's completely opaque all the way through and registers 165 to 170℉ on an instant-read thermometer.
  7. Remove the chicken from the oven and let it rest for about 5 minutes before serving. Serve with your favorite side dish.
