Description
The preparation begins by slicing chicken breasts in half to create even-sized cutlets, then brushing them with melted butter and coating them in a mixture of seasoned breadcrumbs and Parmesan cheese. The chicken is placed on a baking sheet coated lightly with cooking spray and baked at a high temperature to brown the crust. After the initial bake, marinara sauce and shredded mozzarella cheese are spooned over each piece, then baked further to melt the cheese and heat the sauce.
This method provides a crisp exterior without frying, while the seasoned breadcrumb and cheese crust add texture and flavor. The melted mozzarella and tomato sauce create a familiar, comforting finishing touch. Garnishing with fresh basil or parsley adds a vibrant note. This dish pairs well with pasta or a simple salad.
Ingredients
- 4 chicken breast about 8 oz each, sliced in half lengthwise to make 8, boneless, skinless
- 3/4 cup seasoned breadcrumbs (such as 4C, you can also use GF crumbs)
- 1/4 cup Parmesan Cheese or Romano cheese, grated
- 2 tbsp butter (melted, or olive oil)
- 3/4 cup mozzarella cheese I like Polly-o, part-skim
- 1 cup marinara sauce ( or Filetto di Pomodoro)
- cooking spray
- basil (or parsley, optional for garnish)
Instructions
- Preheat oven to 450°F. Spray a large baking sheet lightly with spray.
- Combine breadcrumbs and Parmesan cheese in a bowl. Melt the butter in another bowl. Lightly brush the butter onto the chicken, then dip into breadcrumb mixture. Place on baking sheet and repeat with the remaining chicken.
- Lightly spray a little more oil on top and bake in the oven for 25 minutes.
- Remove from oven, spoon 1 tablespoon marinara sauce over each piece of chicken and top each with 1 1/2 tbsp of shredded mozzarella cheese.
- Bake 5 more minutes or until cheese is melted.
