Baked Chicken Thighs

The Spices

  • 1 ½ teaspoon salt
  • ½ teaspoon black pepper ground
  • ½ teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon parsley dried

The Chicken

  • 1 tablespoon extra virgin olive oil
  • 2 pounds chicken thighs

Instructions

  1. Preheat the oven to 425 degrees F. 
  2. Prepare the chicken by trimming any excess fat or skin, then pat dry with paper towels. 
  3. Mix together the chicken seasoning in a small bowl by combining the salt, pepper, paprika, onion powder, garlic powder and dried parsley. 
  4. Drizzle the chicken with the extra virgin olive oil, then rub the chicken tops and bottoms to fully coat in the oil. 
  5. Sprinkle the seasonings evenly on both sides of the chicken. 
  6. Place the chicken thighs in a 3 quart baking dish. 
  7. Bake the chicken for 25-35 minutes or until the internal temperature reaches 180 degrees F. 
  8. Remove the chicken from the oven and allow to rest for 10 minutes before serving.

Notes

  • Chicken: This recipe is for chicken thighs, of course the same seasoning blend can be used on chicken breasts. Images show bone-in, skin-on chicken thighs. You can use boneless and skinless. Baking times can vary depending on the thickness of the chicken and whether you are using bone-in or boneless. 
  • Internal Temperature: Since baking times can vary, chicken thighs should be cooked to an internal temperature of 175 degrees F. 
  • Salt: How much salt, depends on which type of salt you are using. If you are using coarse kosher salt you should use 1 teaspoon per pound of chicken.
