Baked Chicken Thighs
Description
This recipe for Baked Chicken Thighs uses bone-in and skin-on pieces for a balance of rich flavor and moist texture. Applying olive oil over the chicken helps the ranch seasoning adhere and promotes browning. The homemade ranch seasoning provides a mix of herbs and spices that flavor the chicken throughout.
Baking at 400°F for 30 to 40 minutes allows the thighs to cook through while developing a crispy skin. Cooking time varies by thigh size, so using a meat thermometer to reach an internal temperature of 165°F is recommended to ensure safety and optimal juiciness. Resting the chicken before serving helps redistribute juices.
This dish stores well in sealed containers for up to three days in the refrigerator or can be frozen, making it suitable for advance meal prep. Leftovers reheat gently to preserve texture.
Store-bought ranch seasoning can be substituted, but reduce quantity as it often contains more salt than the homemade version.
Ingredients
- 1 ½ pounds of chicken thighs bone in and skin on
- 1 ½ tablespoons ranch seasoning homemade
- 2 tablespoons olive oil
Instructions
- Preheat oven to 400°F.
- Trim any excess fat or skin off of your chicken, then dry all sides using paper towels.
- Rub the olive oil all over each piece of chicken, then sprinkle the ranch seasoning on the top and bottom, making sure all sides are well covered.
- Place the chicken in a 9 x 9 casserole baking dish that’s been brushed or sprayed with olive oil.
- Bake for 30-40 minutes or until the internal temperature reaches at least 165°F when checked with a meat thermometer. Cooking times will depend on the size of your chicken thighs. Smaller pieces could be ready close to 30 minutes, while larger ones at about the 40 minute mark. This is why it’s important to use a meat thermometer, this way there is no guesswork and your chicken will be cooked perfectly.
- Allow the chicken to rest for a few minutes before cutting into and serving.
- Store leftover chicken in an airtight container for up to 3 days or freeze.
Notes
- Store-bought ranch seasoning may be saltier; use about 1 tablespoon instead of homemade seasoning's 1½ tablespoons.
- Use a meat thermometer to check for an internal temperature of 165°F to ensure perfectly cooked chicken.
- Leftover chicken can be stored airtight for up to 3 days or frozen for longer storage.
