Baked Chicken Thighs, Basic Recipe

Perfectly oven-roasted chicken thighs, a basic recipe for baking chicken thighs in the oven at 200 degrees Celsius/ 400 degrees Fahrenheit.

  • 8 chicken thighs bone-in, skin-on, Note 1
  • 2 tablespoons neutral cooking oil olive or vegetable oil, generic cooking oil
  • paprika Note 2, sweet, powder
  • salt fine sea salt and freshly ground
  • black pepper fine sea salt and freshly ground

Instructions

  1. Preheat the oven to 200 degrees Celsius/ 400 degrees Fahrenheit. Line a baking tray with baking paper or aluminum foil.
  2. Coat with oil: Dry the thighs with a paper towel. Place them in a large bowl, pour the oil over them, and massage the chicken with your hands until everything is coated in oil.8 chicken thighs + 2 tablespoons oil
  3. Spices: Sprinkle the thighs with the spices and rub them well all over. Alternatively, place them directly on the tray skin-side down, and generously sprinkle the underside with salt, pepper, and paprika (or use other spices you like).   4. Turn the chicken pieces skin-side up and generously sprinkle the skin with the spices as well.
  5. Bake for 40 minutes to one hour or until the juices run clear and the skin is golden brown and crispy.

Notes

  • Chicken: You can use 4 thighs and 4 drumsticks instead of only thighs. 
  • Seasoning: Use anything you like, not just salt, pepper, and paprika. For instance: chicken seasoning or dry rub, all-purpose seasoning, Cajun or Italian seasoning, ras-el hanout, curry powder, or a mix of spices you have in your cupboard (garlic/onion powder, cumin, coriander, smoked paprika, chili powder, red pepper flakes, etc.)
