Baked Chicken Wings
Description
This recipe calls for chicken wings coated in olive oil and a baking powder-based dry rub that includes salt, black pepper, garlic powder, smoked paprika, chili powder, and onion powder. Baking on a rack inside a foil-lined sheet pan allows hot air circulation, drying the skin to achieve a crisp finish similar to fried wings.
The wings bake for about 20 minutes, flipped midway, then baked longer to achieve desired doneness and crispness. The baking powder is critical here as it helps draw moisture from the skin, creating a crunchier surface that is often sought in baked wings.
These wings can be served with a variety of dipping sauces to complement the dry rubbed flavor. The recipe suggests measuring internal temperature to ensure safe cooking but prefers cooking closer to 180-190°F for no pink near the joints.

- 2 pounds chicken wings recommend party pack**
- 1 Tablespoon olive oil
- rub
- 2 teaspoons baking powder
- 1 teaspoon salt sea salt
- ½ teaspoon black pepper ground
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ¼ teaspoon chili powder
- 1 teaspoon onion powder
- dipping sauces examples: Ranch, BBQ, Blue Cheese
Instructions
- Preheat the oven to 425 degrees Fahrenheit.
- In a small bowl combine all the rub ingredients.
- Line a baking sheet with aluminum foil and light spray with nonstick cooking spray. Place a baking rack on top of foil. Set aside.
- Pat chicken wings dry with a paper towel. Place chicken wings in a resealable plastic bag or in a bowl.
- Add oil to bag/bowl and toss to coat wings. Then add the rub mixture to the bag/bowl and shake to coat evenly.
- Place chicken wings on the lined baking sheet in an even layer, making sure they don’t touch.
- Place sheet pan in preheated oven. Bake for 20 minutes, flip and bake for an additional 20-30 minutes.
Notes
- Baking powder is essential for drying the wings and achieving a super crispy skin; do not skip this step.
- Cook wings to an internal temperature around 180-190°F to avoid any pink near the joints while maintaining juiciness.
