Baked Chicken Wings

Baked Chicken Wings seasoned with a dry rub containing baking powder and spices become crispy without frying. The wings are coated with oil and the rub then baked on a rack to promote even crisping. This method yields wings with a dry, lightly crisp texture and a balanced seasoning. Serving with dipping sauces like ranch or BBQ is common.

Description

This recipe calls for chicken wings coated in olive oil and a baking powder-based dry rub that includes salt, black pepper, garlic powder, smoked paprika, chili powder, and onion powder. Baking on a rack inside a foil-lined sheet pan allows hot air circulation, drying the skin to achieve a crisp finish similar to fried wings.

The wings bake for about 20 minutes, flipped midway, then baked longer to achieve desired doneness and crispness. The baking powder is critical here as it helps draw moisture from the skin, creating a crunchier surface that is often sought in baked wings.

These wings can be served with a variety of dipping sauces to complement the dry rubbed flavor. The recipe suggests measuring internal temperature to ensure safe cooking but prefers cooking closer to 180-190°F for no pink near the joints.
