Baked Chicken with Cherry Tomatoes

Juicy chicken breasts, sweet smoky tomatoes and all made in the oven. This mediterranean inspired Baked Chicken with Cherry Tomatoes, is packed with flavour and so simple to prepare.

Ingredients
For the chicken
- 2 large chicken breasts boneless, skinless
- 1 tablespoon olive oil
- 1 tablespoon brown sugar
- 1 teaspoon paprika
- 1 teaspoon herbes de provence or mixed herbs
- ½ teaspoon salt
- ½ teaspoon pepper
For the tomatoes
- 3 cups cherry tomatoes 2 tubs
- 3 tablespoon olive oil
- 2 tablespoon herbes de provence or mixed herbs
- 1 teaspoon salt
- 1 teaspoon brown sugar
- 2 tablespoon flat-leaf parsley leaves

Instructions
- Preheat oven to 450°F/230ºC.
Prepare the chicken
- Lay your chicken breasts flat on a chopping board.2 large chicken breasts
- Use a large sharp knife to cut sideways through the breast, keep the knife parallel to the chopping board and continue to cut through the chicken breast until you have two fillets. Repeat with the second chicken breast.
- Combine the chicken marinade spices together in a small bowl.1 tbsp brown sugar1 tsp paprika1 tsp herbes de Provence½ tsp salt½ tsp pepper
- Rub the chicken with the olive oil, then sprinkle over the combined spices.1 tbsp olive oil
To cook
- Combine the whole cherry tomatoes, olive oil, herbes de Provence, sugar and salt in a large bowl. Toss to ensure everything is well mixed.3 cups / 500g g cherry tomatoes3 tbsp olive oil2 tbsp herbes de Provence1 tsp brown sugar1 tsp salt
- Line a baking sheet with greaseproof paper and arrange the chicken fillets in a single layer.
- Tip the tomatoes into a shallow roasting dish.
- Bake for both dishes 15 minutes until the chicken is cooked through and the tomatoes have started to blacken and release their juices.
- Serve the chicken breasts drizzled with all of the tomato juices and chopped parsley.2 tbsp / 3 tablespoon flat-leaf parsley leaves
