Baked Cinnamon French Toast Muffins
Description
Baked Cinnamon French Toast Muffins use thick slices of Texas toast cut into cubes and soaked in a mixture of eggs, whole milk, vanilla extract, and sugar. The bread cubes absorb the custard before being packed into muffin tins and topped with cinnamon-sugar. Baking at 350 degrees produces muffins that are golden on top and soft inside, offering a portion-controlled alternative to traditional French toast. The muffin shape lends itself well to easy serving and reheating options.
The texture is tender and moist from the custard soak, with a gentle warmth and sweetness complemented by the cinnamon sprinkle. Serving them warm and finishing with powdered sugar or syrup adds even more sweetness and visual appeal.
They work well as a convenient breakfast item, brunch treat, or snack and are easy to customize with toppings. Individually wrapping and freezing is possible, and reheating in the microwave allows for quick enjoyment without losing the moist texture.
For storage, keep them in an airtight container at room temperature for up to three days. Gentle reheating ensures they stay soft and palatable.
Ingredients
- 14 bread slices; Texas toast style
- 6 egg
- 2 cups milk whole
- 2 teaspoons vanilla extract
- 6 tablespoons sugar divided
- ½ teaspoon cinnamon
- powdered sugar or syrup; for serving
Instructions
- Preheat oven to 350 degrees and grease a 12-cavity muffin tin. Cut bread slices into cubes and place in a large bowl.
- In a medium bowl whisk together milk, eggs, vanilla, and 3 tablespoons sugar. Pour over bread cubes, then gently stir to coat all the cubes in the egg mixture. Fill muffin tins with soaked bread cubes, packing gently to fill all of the cavity space.
- In a small bowl whisk together remaining 3 tablespoons sugar, and cinnamon. Sprinkle over muffins. Bake for 20 minutes or until golden and bake through the middle.
- Serve warm topped with powdered sugar or syrup. To freeze for later, wrap individually in plastic wrap. To reheat, unwrap and microwave for 30-60 seconds.
Notes
- Store muffins in an airtight container at room temperature for up to three days to maintain freshness.
- Reheat muffins in the microwave for 30 to 60 seconds before serving to warm through without drying out.
- Wrap muffins individually in plastic wrap before freezing to preserve texture and flavor.
- Serve warm and top with powdered sugar or syrup as desired for added sweetness.
