Baked Cod with Tomatoes & Capers

This baked cod features tender fish fillets roasted alongside cherry tomatoes, capers, and garlic. Olive oil and lemon juice start the flavor base, while dried basil and lemon pepper seasoning deepen the aromatic profile. The dish finishes with melted butter and fresh herbs for a buttery, bright accompaniment to flaky cod. It’s an accessible, wholesome main course.

Description

The recipe begins by tossing cod fillets with fresh lemon juice and olive oil, then chilling them briefly. Cherry tomatoes are combined with olive oil, minced garlic, dried basil, capers, lemon pepper, salt, and pepper, then roasted for 10 minutes to soften and develop flavor. The marinated cod is nestled into the roasting pan and drizzled with melted butter before baking until the fish is just opaque and flakes easily.

The result is moist, flaky cod complemented by tender, savory roasted tomatoes and briny capers. Finishing with fresh parsley and basil adds a hint of brightness and herbaceous aroma. This dish offers a balanced combination of mild fish, acidity, and buttery richness.

This baked cod pairs well with simple sides like steamed vegetables or rice to absorb the flavorful juices. Cooking times vary slightly with fish thickness; thicker fillets need extra baking time to cook through properly.
