Baked Dijon-Brown Sugar Corned Beef
Description
The Baked Dijon-Brown Sugar Corned Beef starts with rinsed corned beef brisket seasoned by brushing thickly with Dijon mustard and topping with brown sugar. Baking the wrapped beef at 375°F for about three hours allows the flavors to meld and the meat to become tender. Wrapping the beef in foil creates a steaming environment that preserves moisture while baking.
After baking, the foil is opened and the beef is broiled for a few minutes. This final step caramelizes the brown sugar and mustard topping to form a bubbly, lightly browned crust that adds textural contrast and intensifies flavors. The beef should be rested briefly before slicing across the grain to ensure tenderness and retain juices.
This recipe is well-suited for those wanting a flavorful, oven-cooked take on corned beef with a lightly sweet and tangy glaze. The mustard and sugar balance enhances the meat's natural savoriness, making it ideal for serving with mustard on the side as desired.
Ingredients
- 3 lb corned beef rinsed & seasoning packet discarded
- ½ cup Dijon mustard
- ¼ cup brown sugar
Instructions
- Preheat the oven to 375 degrees. Line a baking sheet with foil for easier cleanup.
- Brush a thick coating of Dijon mustard over the entire piece of beef. Place the fat side up on a large piece of tin foil.
- Next, sprinkle the brown sugar on top evenly.
- Wrap the corned beef with foil so that space is left between the top of the corned beef and the tin foil.
- Wrap in a second piece of foil. Place into the oven and bake for 3 hours.
- Open the foil and broil the corned beef for 2-3 minutes, until the top is bubbly and lightly browned.
- Watch carefully so it doesn’t burn.
- Let the corned beef rest for at least 10 minutes before slicing across the grain of the meat.
- Serve with the reserved extra Dijon mustard on the side if desired. Enjoy!
