Baked Donuts

These baked donuts combine all-purpose flour, sugars, and buttermilk with baking powder and soda for leavening, delivering soft, cake-like donuts with a tender crumb. The batter is gently mixed and baked in a donut pan, then brushed with melted salted butter and coated in a cinnamon sugar mix that adds a sweet, spiced finish. Optional glazes like vanilla or chocolate can be used as an alternative topping to enhance flavor and texture. The recipe balances richness and slight tang from the buttermilk to create a classic baked treat.

Description

The Baked Donuts recipe features a blend of all-purpose flour, white and brown sugars, cornstarch, and leavening agents such as baking powder and baking soda, ensuring a light yet moist texture. Buttermilk and eggs contribute to the batter's tenderness and subtle tang. Butter is gently folded into the batter before it's scooped or piped into greased donut pans and baked at 350°F (175°C) until set and lightly golden.

Once baked, the donuts are brushed with melted salted butter and immediately coated in a cinnamon sugar topping, which creates a delicate, gently crisp exterior with a warm, cinnamon flavor. The texture is soft inside with a slightly caramelized, sweet crust. For variation, the donuts can be dipped in powdered sugar or a glaze, including vanilla or chocolate, which hardens on the surface for added sweetness and moisture.

These donuts suit a breakfast or afternoon snack setting. Their baked nature provides a lighter alternative to fried donuts, yet retains satisfying softness and a subtle sweetness from the cinnamon sugar. They can be enjoyed fresh or within a day or two for best texture.

The original notes suggest brushing with butter rather than dipping to avoid sogginess. Glaze options include a vanilla glaze made from powdered sugar, milk, and vanilla extract, or chocolate glaze with added cocoa powder. Allow glazes at least 30 minutes to set. Using a pastry brush for the topping helps to apply butter evenly without oversaturating the donuts.

Ingredients

Servings
  • 2 cups all-purpose flour
  • ¼ cup sugar
  • ¼ cup brown sugar
  • 1 Tablespoon cornstarch
  • 1 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • teaspoon ground nutmeg optional
  • 1 cup buttermilk
  • 1 large egg
  • ½ teaspoon vanilla extract
  • 3 Tablespoons butter melted and slightly cooled, unsalted

Topping (see notes for alternative topping options)

  • 4 Tablespoons butter melted, salted
  • ½ cup granulated sugar
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350F (175C) and lightly grease a 12-count donut pan (I actually use two 6-count) with baking spray (or lightly grease and flour). Set aside.
  2. In a large bowl, whisk together flour, sugars, baking powder, baking soda, cornstarch, salt, and nutmeg (if using).
  3. In a separate bowl whisk together buttermilk, egg, and vanilla extract. While whisking constantly, drizzle in butter until combined (it’s OK if the mixture looks a bit curdled!).
  4. Add the liquid mixture to the dry ingredients and use a spatula to carefully fold together until just combined (all ingredients should be combined, but don’t over-mix or donuts will be dense and dry).
  5. Pipe or spread the batter evenly into prepared donut pans.
  6. Transfer to 350F (175C) oven and bake for 10-12 minutes or a toothpick inserted in the thickest part of a donut comes out clean. Allow to cool for several minutes then carefully remove to a cooling rack.
  7. Use a pastry brush¹ to brush immediately with melted salted butter and then whisk together granulated sugar and cinnamon and dip donuts in mixture. Donuts are best enjoyed warm.

Notes

  • Brush the donuts with melted salted butter immediately after baking and then coat with cinnamon sugar for the best texture.
  • Use a pastry brush rather than dipping to avoid making the donuts soggy from excess butter.
  • Optional glazes include vanilla glaze made with powdered sugar, milk, and vanilla extract, or chocolate glaze with cocoa powder added.
  • Allow dipped donuts to sit at least 30 minutes for the glaze to harden before serving.
