Baked Egg and Sweet Potato Nests

Baked egg and sweet potato nests is a healthy, paleo/whole30, gluten-free, TWO INGREDIENT breakfast recipe- a great and easy way to get veggies in the morning!

Ingredients

Servings
  • 1 sweet potato spiralized (or diced)
  • 2 tablespoons extra-virgin olive oil
  • kosher salt to taste
  • black pepper to taste
  • 2 egg
  • green onion for garnish (optional, chopped

Instructions

  1. Preheat oven to 425 degrees F.
  2. Place sweet potatoes in individual skillets or a larger skillet/baking dish and mix with olive oil (2 tablespoons), salt, and pepper.
  3. Roast for approximately 30 minutes, until starting to get crispy and browned.
  4. Remove from oven and, using a wooden spoon, make small wells in the center of the potatoes.
  5. Crack an egg into each well.
  6. Bake for an additional 5-7 minutes, or until egg is cooked to desired doneness.
  7. Serve sprinkled with more salt and pepper and sliced green onions.
