Baked Eggs With Goat Cheese And Tomato - delicious eggs are baked in a homemade tomato sauce and goat cheese. Perfect for breakfast, lunch and dinner.

Ingredients

  • 6 large eggs
  • 4-5 oz goat cheese
  • 28 oz crushed tomatoes large
  • 1 onion medium, chopped
  • 1 clove garlic crushed
  • 1/2 teaspoon sugar
  • 1 teaspoon olive oil
  • 1/2 Teaspoon oregano dried
  • 1/2 Teaspoon basil dried
  • salt and pepper to taste

Instructions

  1. Heat an oven proof skillet* over medium heat. Add the olive oil
  2. Add the onions, salt, pepper, oregano and basil. Cook for 2-3 until softened
  3. Add the garlic and cook for 1-2 minutes more. Be careful no to burn the garlic
  4. Pour in the crushed tomatoes and let the sauce come to a boil
  5. Let it cook on low heat for 10 minutes (more if you have the time). Check for seasoning and make the necessary adjustments
  6. Meanwhile preheat the oven to 400 degrees Fahrenheit
  7. Add dollops of goat cheese all over the simmering tomato sauce
  8. Crack in the eggs all over the skillet
  9. Place the skillet in the oven and cook for 8-10 minutes or until the eggs are cooked and the center is still runny
  10. Carefully remove from heat and season the eggs with salt and pepper
  11. Let it cool for 1-2 minutes before eating

Notes

  • *If preparing individual portions. Just cook the sauce in one pot and add it to the individual containers.
