Ingredients
Baked Feta Pasta Base
- 1 1 cup cherry tomatoes
- 7 7 ounces feta cheese
- 1 1 sprig fresh rosemary (or another herb you like)
- 4 4 tablespoons extra virgin olive oil
- 1 1 can hearts of palm pasta about 225 grams, drained
Suggested extras
- 7 7 ounces turkey breakfast sausage sliced
- 1 1 cup white button mushrooms quartered
- 1 1 small yellow bell pepper thinly sliced

Instructions
- Put the 1 cup cherry tomatoes in a baking / casserole dish, plus the meat and other vegetables, if using. Make space in the middle for the 7 ounces feta cheese cube. If using crumbled cheese, put it all pressed together in the middle. Put the 1 sprig fresh rosemary on top of the cheese and drizzle everything with 4 tablespoons extra virgin olive oil
- Bake in a pre-heated oven at 200 °C (392 °F) for about 40 minutes, until the vegetables are roasted and the cheese is soft.
- Using a fork, smash the tomatoes and the cheese and mix everything up. Be careful with hot tomato sauce splashes.
- Add the 1 can hearts of palm pasta, mix, and serve.
