Baked French Fries with Blue Cheese Dressing

For the potatoes:

  • 3-4 russet potato
  • 2 Tablespoons olive oil
  • 2 ½ teaspoons kosher salt divided
  • 2 ½ teaspoons granulated sugar divided
  • 1 ½ teaspoon cinnamon divided
  • ½ teaspoon nutmeg divided

For the dressing:

  • ½ cup mayonnaise
  • ½ cup sour cream
  • ½ teaspoon black pepper
  • ½ teaspoon kosher salt
  • ¼ cup milk
  • ½ cup blue cheese crumbled

Instructions

  1. Preheat oven to 450 degree F. Scrub the potatoes clean and dry completely. Cut potatoes lengthwise into thin strips (about 1/4 inch thick).
  2. In a small bowl, combine 1 teaspoon kosher salt, 1 teaspoon sugar, 1 teaspoon cinnamon and 1/4 teaspoon nutmeg. Set aside, this will be used to sprinkle over potatoes after cooking.
  3. In a large bowl, combine cut potatoes with olive oil and remaining 1 1/2 teaspoon kosher salt, 1 1/2 teaspoon sugar, 1/2 teaspoon cinnamon and 1/4 teaspoon nutmeg. Mix gently.
  4. Pour potatoes onto a large baking sheet (in a single layer as much as possible). Bake for 45 minutes, using a spatula, turn the potatoes over on the baking sheet every 15 minutes.
  5. While the potatoes are cooking, prepare the dressing. Combine all the dressing ingredients into a small saucepan. Simmer over low heat until smooth and warm. Keep warm until ready to serve. This may also be heated in the microwave.
  6. Remove potatoes from oven and immediately sprinkle with reserved cinnamon mixture. Serve with blue cheese dressing.

Notes

  • Not a fan of blue cheese? Baked French Fries are also delicious served up with a side of homemade ranch dressing, Tzatziki sauce or chimichurri sauce!
  • For perfectly golden, crispy fries turn the potatoes every 15 minutes as they bake!
  • Keep dressing warm until ready to serve. If it cools down while the potatoes are baking, reheat it in the microwave.
  • Milk. I usually opt for whole milk, but buttermilk is wonderful too. Don't have any? Make my buttermilk substitute instead!
