Baked Gluten-Free Apple Fritters

These baked gluten-free apple fritters use a coconut milk and egg batter combined with gluten-free flour and pumpkin pie spice to create tender, spiced fritters studded with fresh apple pieces. The fritters are baked until golden and finished with a glaze that adds sweetness and moisture, delivering a comforting textured treat without frying.

Description

Baked Gluten-Free Apple Fritters start with a mixture of full-fat canned coconut milk, eggs, lemon juice, and vanilla extract to form the wet base. Incorporating gluten-free all-purpose flour, maple sugar, baking powder, pumpkin pie spice, and sea salt yields a thick dough that holds diced peeled apples evenly throughout. Portioning dough onto parchment-lined baking sheets and baking at 350°F produces fritters with a golden exterior and soft interior.

The addition of lemon juice balances sweetness and the pumpkin pie spice enhances the warming flavors. The optional glaze, made by mixing powdered sugar with apple cider or coconut milk, is brushed on after baking and briefly broiled to create a glossy, sweet finish. This glazing step adds moisture and a subtle tang complementing the fritters’ apple notes.

This method avoids deep frying, resulting in a less oily but still tender fritter suitable for those avoiding gluten. They can be served as a breakfast treat or dessert, pairing well with coffee or tea.

Ingredients

Servings
  • cup coconut milk full-fat, canned
  • 2 egg
  • 2 tsp lemon juice or cider vinegar
  • 1 tsp vanilla extract pure
  • 1 ½ cups all-purpose flour gluten-free
  • 1/3 cup maple sugar or brown sugar
  • 2 tsp baking powder
  • 1 ½ tsp pumpkin pie spice or ground cinnamon
  • ½ tsp salt sea salt
  • 2 apple peeled, cored and diced (2 cups, small

Optional Glaze:

  • 1 cup powdered sugar or powdered maple sugar
  • 4 to 7 Tbsp apple cider or full-fat canned coconut milk or melted butter

Instructions

  1. Preheat the oven to 350 degrees F and line a large baking sheet with parchment paper.
  2. Whisk the coconut milk, eggs, lemon juice, and vanilla extract together in a mixing bowl.
  3. In a separate mixing bowl, stir together the flour, sugar, baking powder, pumpkin pie spice and sea salt.
  4. Pour the dry mixture into the bowl with the wet mixture and mix until a thick dough forms.
  5. Add the chopped apples and mix them into the dough. For this portion, I use my hands to mix and press the apples into the dough so that the chunks are evenly distributed.
  6. Portion out about ½ cup of dough and place it on the parchment-lined baking sheet. Repeat for the remaining dough.
  7. Bake at 350 for 15 minutes, until the fritters are golden-brown.
  8. While the fritters are baking, mix together the ingredients for the glaze in a bowl.
  9. Remove the fritters from the oven and brush them with the glaze. Place them back in the oven and turn on the high broil setting. Broil for 1 to 2 minutes, keeping a watchful eye so that the fritters don’t burn.
  10. Remove the fritters from the oven and drizzle with the remaining glaze. Allow them to cool for at least 5 minutes before serving.
