Baked Ham and Apples Recipe
Description
The Baked Ham and Apples recipe uses a large spiral-cut smoked ham as its centerpiece, infused with crisp slices of Granny Smith apples that are carefully arranged between the ham slices to both flavor and keep the meat moist during cooking. The glaze made from whole-grain mustard, Dijon mustard, honey, and a hint of cardamom or cinnamon is brushed over the ham, creating a glossy, slightly sweet coating. The ham is baked uncovered, first brushed with glaze and then basted with pan juices, allowing the outside to achieve a slightly crispy texture while staying tender inside.
The tartness of the apples contrasts with the savory-smoky ham and the sweet-spiced glaze, producing a balance that enhances the flavor complexity. This makes it suitable as a centerpiece for festive meals or gatherings where a substantial and flavorful meat dish is desired.
To prepare, position the apple slices throughout the ham and turn it flat-side-down once fully filled. Baking is done at 350°F for two hours with periodic glazing and basting from the pan juices to maximize flavor and moistness. No covering is needed as the apples retain humidity within the ham, ensuring the interior won't dry out.
Ingredients
- 8-10 pound smoked ham spiral-cut
- 3 apple Granny Smith variety
- 1/4 cup whole-grain mustard
- 2 tablespoons Dijon mustard
- 1/4 cup honey
- 1/2 teaspoon ground cardamom (or substitute cinnamon)
Instructions
- To fit the standing ham in your oven, remove one oven rack and lower the other rack to the lowest position. Preheat the oven to 350 degrees F. Line a large rimmed baking sheet with foil and set the spiral ham on top.
- Peel and core the apples, then slice into paper-thin rounds.
- Tuck the apple slices between the slices of ham, skipping a row here and there, and spacing them out all the way around the ham. Once the ham gets too full of apples to hold its shape, turn the ham flat-side-down.
- Whisk the mustards, honey, and cardamom together in a small bowl. Brush over the entire surface of the ham. Bake for 1 hour.
- Brush the pan juices over the ham, and bake for 1 more hour, until crispy on the outside. Brush the pan juices over the ham again before serving warm.
Notes
- Apple slices tucked between ham slices help keep the ham moist without needing a cover during baking.
- The honey mustard glaze caramelizes nicely, providing a sweet crust contrast to the smoky ham.
- Use Granny Smith apples for their tartness and firm texture to hold during baking.
- Turn the ham flat-side-down when it gets too full of apples to keep its shape while baking.
