Baked Ham Recipe with Chipotle-Honey Glaze
Description
The Baked Ham Recipe with Chipotle-Honey Glaze uses an 8-10 pound cooked bone-in ham as its base. The glaze is made by blending brown sugar, honey, apple cider vinegar, chipotle peppers in adobo, garlic, spicy brown mustard, ancho powder, hot sauce, cumin, salt, and pepper into a thick paste. Adding amber beer to the glaze and simmering it reduces the mixture into a flavorful syrup.
The ham is scored with a cross-hatch pattern and baked initially uncovered for 90 minutes. It is then brushed with the glaze and baked for an additional 30 minutes, during which the glaze is applied multiple times to build a sticky, caramelized coating. The internal temperature is monitored to reach 140°F ensuring it is properly warmed but not overcooked.
This ham serves well as a centerpiece for gatherings, offering a balance between sweet and smoky heat that can be customized by adjusting the chili components. It pairs well with traditional side dishes and makes great leftovers for sandwiches or meals.
The recipe notes indicate the heat level is mild to medium, emphasizing flavor over spiciness. Additional chili flakes or hotter chili powder can be added to increase heat if desired.
Ingredients
- 1 ham 8-10 pounds, fully cooked, bone-in
- 3/4 cup light brown sugar
- 3 tablespoons honey
- 3 tablespoons apple cider vinegar
- 7 ounce chipotle peppers in adobo sauce 1 small can
- 4 garlic cloves
- 1 tablespoon brown mustard spicy
- 1 tablespoon ancho powder or use your favorite chili powder blend
- 1-2 tablespoons hot sauce use your favorite!
- 1 teaspoon cumin
- salt to taste
- black pepper to taste
- 12 ounces amber beer I used a Mexican lager
Instructions
- First, heat your oven to 325 degrees F. Place the ham into a lightly oiled roasting pan, cut side down.
- Use a knife to score the surface of the ham with a cross-hatch pattern. Bake the ham for 90 minutes, uncovered.
- While the ham is baking, make the chipotle-honey glaze. Add the following ingredients to a food processor: brown sugar, honey, vinegar, chipotles in adobo, garlic, mustard, ancho powder, hot sauce, cumin and a bit of salt and pepper. Process to form a thick paste.
- Transfer the mixture to a large pan and stir in the beer to incorporate. Bring the glaze to a quick boil, then reduce the heat and simmer for 10-15 minutes to reduce it slightly. Reserve half of the glaze to serve it with the finished ham.
- After 90 minutes, brush the ham with glaze then continue to bake another 30 minutes, adding a bit more glaze a few times during the final cooking, until the internal temperature of the ham measures 140 degrees F when measured with a meat thermometer.
- Remove the ham and cool it slightly. Carve and serve with the extra glaze.
Notes
- The chipotle and adobo sauce provide mild to medium heat; adjust spiciness with extra chili flakes or hotter chili powder as desired.
- Check the ham’s internal temperature with a meat thermometer to avoid overcooking, aiming for 140°F.
- Use a Mexican lager or similar amber beer to simmer the glaze for authentic flavor integration.
