Baked Home Fries
Description
This Baked Home Fries recipe starts by gently simmering quartered baby potatoes to soften them slightly without breaking apart. The potatoes are combined with diced green bell pepper and onion, then tossed with olive oil, sea salt, ground black pepper, and garlic granules for seasoning. The mixture is spread out on a baking tray to allow each piece space for roasting, which develops a crispy finish on the outside while keeping the interior tender.
The inclusion of bell peppers and onion introduces a mild sweetness and aromatic flavor complementing the earthy potatoes. Garlic granules add savory depth without overpowering the dish. Baking at a high temperature crisps the potatoes and caramelizes the vegetables slightly, enhancing texture and flavor. Leaving the skins on helps achieve a crunchy edge.
For variation, cooked bacon pieces can be mixed in with the vegetables to add smoky meatiness. Fresh herbs added just before serving brighten the dish visually and flavor-wise. This side pairs well with eggs at breakfast or as an accompaniment to grilled or roasted meats.
Smaller potato pieces crisp better but watch carefully to avoid burning. Ensuring enough space between pieces discourages steaming and promotes browning.
