Baked Honey Mustard Chicken

Baked Honey Mustard Chicken features chicken breasts or thighs baked with a honey and mixed mustard sauce over a sautéed onion and garlic base. Rosemary sprigs add aromatic flavor. The dish balances sweet, tangy, and savory notes, delivering juicy, tender chicken with a flavorful glaze.

Description

This recipe prepares a sauce combining whole grain mustard, Dijon mustard, yellow mustard, honey, and olive oil beaten to a smooth consistency. Yellow onion is sautéed until golden and garlic quickly added; this mixture forms the base in the baking dish. The chicken is seasoned simply with salt and pepper and layered over the onion.

The honey mustard sauce is poured evenly to coat each piece, with rosemary sprigs arranged around for an herby aroma during baking. The chicken bakes at 375°F for 25 to 30 minutes until reaching an internal temperature of 165°F and remains juicy. Tenting with foil near the end prevents the sauce from burning if necessary.

This method produces tender, flavorful chicken breasts or thighs with a honey-mustard glaze and soft, sweet caramelized onion underneath. It is suited for serving with simple sides like steamed vegetables, rice, or potatoes for an easy main course.

Ingredients

Servings
  • 4 to 5 (8 oz each) chicken breast or 6 boneless skinless chicken thighs, boneless skinless
  • 1/4 cup whole grain coarse mustard
  • 2 Tbsp Dijon mustard
  • 2 Tbsp yellow mustard
  • 1/4 cup + 2 Tbsp honey
  • 2 Tbsp olive oil divided
  • salt freshly ground
  • black pepper freshly ground
  • 1 cup chopped yellow onion
  • 1 Tbsp minced garlic (3 cloves)
  • 4 rosemary small sprigs

Instructions

  1. Preheat oven to 375 degrees F. In a mixing bowl, whisk together coarse mustard, dijon mustard, yellow mustard, honey and 1 Tbsp olive oil. Spray 13 by 9-inch baking dish with non-stick cooking spray.
  2. In a small skillet, heat remaining 1 Tbsp olive oil over medium heat. Add onion and saute about 8 minutes until golden brown, then add garlic and saute 30 seconds longer. Pour into prepared baking dish and spread into an even layer.
  3. Season each chicken breast with salt and pepper on both sides, then set chicken over onion layer in baking dish.
  4. Pour mustard mixture evenly over chicken, working to cover each chicken breast entirely. Lay sprigs of rosemary between chicken breasts.
  5. Bake in preheated oven 25 to 30 minutes until chicken registers 165 degrees in center of thickest portion. If needed tent with foil near the end of cooking to prevent sauce from burning. Spoon sauce over chicken to serve.
