Baked Huli Huli Chicken

Baked Huli Huli chicken is a tried and true recipe now made in the oven! Tender chicken baked in a sweet and savory sauce. This easy one-pan dinner is full of Hawaiian-inspired flavors!

  • pounds chicken thigh or chicken breasts, boneless skinless
  • ½ cup pineapple juice
  • ¼ cup soy sauce
  • ¼ cup brown sugar
  • 3 tablespoons ketchup
  • 1 teaspoon ground ginger
  • 1 teaspoon garlic minced
  • 1 tablespoon cornstarch
  • 6 pineapple drained, rings
  • green onion for garnish

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Place 2½ pounds boneless skinless chicken thighs, in a single layer into a 13x9-inch baking dish.
  3. In a medium saucepan, whisk together ½ cup pineapple juice, ¼ cup soy sauce, ¼ cup brown sugar, 3 tablespoons ketchup, 1 teaspoon ground ginger, 1 teaspoon garlic,and 1 tablespoon cornstarch. Heat over medium heat until it starts to thicken. Remove from the heat and reserve 1/4 cup of the marinade for later.
  4. Pour the remaining sauce mixture over the top of the chicken thighs.
  5. Bake in the preheated oven for 35-40 minutes or until the chicken reaches 165 degrees Fahrenheit.
  6. Arrange the 6 pineapple rings, on top of the chicken. Brush the reserved marinade on top of the pineapple rings and chicken thighs.
  7. Adjust the oven to broil and broil the chicken for 3-5 minutes. Watch it closely and remove it once the chicken is golden and caramelized.
  8. Enjoy the chicken thighs whole or shredded over rice. Garnish with green onions, and enjoy!
