Description

Baked Kale Gratin starts with removing kale leaves from stems and massaging the leaves to break down fibers for a silky texture. The kale is layered in a casserole dish and topped with shredded Gouda cheese, Italian seasoning, garlic and onion powders, kosher salt, and black pepper. Heavy cream is poured over to add richness. Baking at 350°F melts the cheese and softens the kale, letting the flavors meld and the kale reduce in volume.

  • 6 cups kale , leaves removed from stems
  • 3/4 cup heavy cream
  • 1 1/2 cups gouda cheese , shredded
  • 1 teaspoon Italian seasoning homemade
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon kosher salt coarse
  • 1/2 teaspoon black pepper freshly ground
  • 1/4 cup Parmesan Cheese , freshly grated

Instructions

  1. Coat a 5-6 quart casserole dish with cooking spray and preheat the oven to 350°F.
  2. Using your hands, massage the kale well. This breaks down fibers making it silky smooth to eat.
  3. Pile the kale into the casserole dish. Depending on the size and shape of your dish, it might mound, that is fine, it will cook down.
  4. Top with the shredded cheese, Italian seasoning, garlic powder, onion powder, Kosher salt and freshly ground black pepper.
  5. Pour the heavy cream over the top of the casserole.
  6. Bake, uncovered, for 20-25 minutes or until it has reduced in size and cheese has melted.
  7. Remove, top with parmesan cheese while still hot and serve immediately.
