Baked Lemon Chicken
Description
This recipe starts by seasoning chicken breasts with salt, black pepper, and Italian seasoning. The chicken is then seared in olive oil over medium-high heat for a few minutes on each side to develop a browned surface. The chicken is transferred to a baking dish where melted butter mixed with minced garlic, chicken broth, and lemon juice is poured over it. The breasts bake at 400°F until cooked through, allowing the sauce to infuse the meat while keeping it moist.
The lemon and garlic provide fresh, bright notes that balance the richness of butter and the savory seasoning. Baking rather than pan-cooking through prevents overbrowning and helps retain moisture. After baking, the sauce is spooned over the chicken and fresh parsley and optional lemon slices garnish the dish, adding freshness and visual appeal.
This chicken pairs well with salads, rice, or steamed vegetables for a balanced meal. The recipe notes emphasize adjusting baking time if chicken breasts vary in thickness to avoid dryness or undercooking.
Ingredients
- 1 1/4 pounds chicken breast boneless skinless
- 1 tablespoon olive oil
- salt to taste
- black pepper to taste
- 1 teaspoon Italian seasoning
- 3 tablespoons butter melted
- 1 teaspoon garlic minced
- 1/4 cup chicken broth
- 2 tablespoons lemon juice
- 1 tablespoon parsley chopped
- lemon optional, slices for serving
Instructions
- Preheat the oven to 400 degrees. Season the chicken breasts on both sides with salt, pepper and the Italian seasoning.
- Heat the olive oil in a large pan over medium high heat. Add the chicken breasts and cook for 3-5 minutes on each side or until browned.
- Transfer the chicken to a baking dish.
- In a small bowl, mix together the butter, garlic, chicken broth and lemon juice. Pour the butter mixture over the chicken.
- Bake for 25 minutes or until chicken is cooked through. Bake time may vary depending on the thickness of your chicken breasts.
- Spoon the sauce on the bottom of the baking dish over the chicken, then sprinkle with parsley and serve. Garnish with lemon slices if desired.
Notes
- Use chicken breasts about 1 inch thick; reduce baking time if using thinner breasts to prevent overcooking.
